Description

Ingredients

23 medium shallots, thinly sliced (about 1/16-inch thick)

1/2 cup neutral oil (canola, vegetable, or peanut oil)

Salt, to taste


Instructions

  1. Peel and slice shallots into thin rings or half-moons using a mandoline or sharp knife.
  2. Place shallots and oil together in a small saucepan or skillet (starting with cold oil helps even cooking).
  3. Heat over medium, stirring often, for 8–12 minutes until shallots gradually turn golden brown. Watch carefully near the end to avoid burning.
  4. Remove shallots with a slotted spoon and transfer to a paper towel-lined plate. Spread out and sprinkle with salt.
  5. Allow to cool—they will continue crisping as they sit. Serve immediately or store once cooled.
