Description
These crispy roasted chicken thighs are quick to prepare and baked to juicy perfection with a flavorful blend of spices. Perfect for a weeknight dinner or meal prep.
Ingredients
- 6 large bone-in, skin-on chicken thighs (about 3 pounds)
- 3 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C) and place a cooling rack on a baking sheet or spray the baking sheet with non-stick cooking spray.
- In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
- Pat the chicken thighs dry with paper towels. Brush the seasoning mixture on both sides of each thigh, including under the skin.
- Place the seasoned chicken thighs skin-side up on the prepared baking sheet.
- Bake for 35-40 minutes, or until the internal temperature reaches 165°F (74°C).
- For extra crispy skin, turn on the broiler for the last 2-4 minutes of baking.
- Let the chicken rest for 5 minutes before serving.
Notes
- Make sure your chicken thighs are roughly the same size for even cooking.
- You can substitute boneless, skinless chicken thighs or chicken breasts, but adjust cooking time accordingly.
