- 3 tbsp corn starch
- Parsley, minced, to taste
- Parmesan cheese, grated, for topping

- Salt, to taste
Sweet Chilli Mayo (optional)
- 1 part sweet chilli sauce
- 1 part mayonnaise
Instructions
- Boil Potatoes: Boil the peeled and chopped potatoes in salted boiling water until they are fork tender. Drain and let them steam dry for a few minutes to remove excess moisture.
- Mash and Mix: Transfer the drained potatoes to a bowl and mash thoroughly with a fork or potato ricer. Add corn starch, minced parsley, garlic powder, onion powder, smoked paprika, cumin powder, and salt. Mix thoroughly to combine all ingredients evenly.
- Form Potato Balls: Using your hands, scoop about 2 tablespoons of the potato mixture and roll it into a smooth ball. Repeat this process until all the mixture is used up.
- Heat Oil: Heat a pot of neutral oil to 170°C (350°F), ensuring the temperature is steady for frying.
- Fry Potato Balls: Carefully drop the potato balls into the hot oil in batches to avoid overcrowding. Fry for 10-12 minutes, turning occasionally, until they are golden brown and crispy on all sides.
- Drain and Serve: Remove the fried potato balls with a slotted spoon and drain them on paper towels to remove excess oil. Immediately grate parmesan cheese over the top while still hot.
- Prepare Sweet Chilli Mayo: In a small bowl, mix equal parts sweet chilli sauce and mayonnaise to create a creamy, spicy dip. Serve alongside the potato balls.
