Ingredients
Chicken Wings
- 4 lbs. chicken wings, separated and wing tips discarded
- 1 1/2 tbsp baking powder
- 1 tsp seasoned salt
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
Buffalo Sauce
- 3 tbsp butter, melted
- 1/3 cup Buffalo sauce, such as Frank’s Red Hot
Instructions
- Preheat and Prepare: Preheat your oven to 450°F (232°C). Line a large rimmed baking sheet with aluminum foil, then place an oven-safe cooling rack on top. Spritz the rack with non-stick cooking spray to prevent sticking and set aside.
- Dry the Wings: Use plenty of paper towels to pat the chicken wings completely dry, squeezing out as much moisture as possible to ensure crispiness.
- Season Wings: In a large bowl or a zip-close bag, combine baking powder, seasoned salt, garlic powder, black pepper, and cayenne pepper. Whisk or shake to blend the spices evenly. Add the dried wings and toss or shake until they are well coated with the seasoning mixture.
- Bake the Wings: Arrange the wings in a single layer on the prepared rack, ensuring they do not touch, which helps them cook evenly and crisp up. Bake in the preheated oven for 30 minutes. Then, flip the wings over and bake for an additional 30 to 40 minutes, or until they are golden brown and crispy.
- Make Buffalo Sauce and Toss: While the wings bake, combine the melted butter and buffalo sauce in a large bowl and whisk it together to form a smooth sauce. When wings are done, quickly toss them in the buffalo sauce ensuring each wing is evenly coated.
