Ingredients

Feta Filling

  • 6 ounces crumbled feta
  • 1 tbsp fresh dill (finely chopped)
  • 1 tbsp fresh thyme (finely chopped)
  • 1 tbsp fresh lemon juice
  • 1 tbsp honey
  • 2 cloves garlic (minced)

Phyllo Dough Rolls

  • 7 sheets frozen phyllo dough (thawed)
  • 1/4 cup extra virgin olive oil + more for brushing

Sweet Chili Sauce

  • 1/4 cup sweet chili sauce (store-bought)
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp Sriracha sauce
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp water


Instructions

  1. Preheat Oven and Prepare Feta Mixture: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. In a bowl, combine the crumbled feta, finely chopped dill, thyme, lemon juice, minced garlic, and a drizzle of honey. Mix thoroughly until well blended to create the flavorful filling.
  2. Prepare the Phyllo Dough: Lay one sheet of thawed phyllo dough on a clean surface while keeping the others covered with a damp towel to prevent drying. Fold the sheet in half and brush the top with extra virgin olive oil evenly.
  3. Fill and Fold the Rolls: Spoon about 2 tablespoons of the feta mixture along the bottom center of the folded phyllo sheet. Fold the edges inward over the filling then crease the dough gently to smooth it out.
  4. Roll the Dough: Roll the dough tightly into a log, stopping about one inch from the end. Brush more olive oil on the bottom edge and finish rolling securely. Place the roll seam side down on the prepared baking sheet.
  5. Brush and Bake: Brush the tops of each feta roll with additional olive oil. Place them on the center rack of the oven and bake for 20 minutes until golden and crispy.
  6. Prepare the Sweet Chili Sauce: While the rolls bake, combine the sweet chili sauce, soy sauce, honey, Sriracha, lemon juice, and water in a medium saucepan. Heat over low heat until just simmering, then immediately remove from heat and transfer to a serving dish.
  7. Finish and Serve: Once baked, brush the rolls generously with the prepared sweet chili sauce. Garnish with fresh thyme if desired and serve warm alongside the remaining sauce for dipping.
