Ingredients
Feta Filling
- 6 ounces crumbled feta
- 1 tbsp fresh dill (finely chopped)
- 1 tbsp fresh thyme (finely chopped)
- 1 tbsp fresh lemon juice
- 1 tbsp honey
- 2 cloves garlic (minced)
Phyllo Dough Rolls
- 7 sheets frozen phyllo dough (thawed)
- 1/4 cup extra virgin olive oil + more for brushing
Sweet Chili Sauce
- 1/4 cup sweet chili sauce (store-bought)
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp Sriracha sauce
- 1 tbsp freshly squeezed lemon juice
- 1 tbsp water
Instructions
- Preheat Oven and Prepare Feta Mixture: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. In a bowl, combine the crumbled feta, finely chopped dill, thyme, lemon juice, minced garlic, and a drizzle of honey. Mix thoroughly until well blended to create the flavorful filling.
- Prepare the Phyllo Dough: Lay one sheet of thawed phyllo dough on a clean surface while keeping the others covered with a damp towel to prevent drying. Fold the sheet in half and brush the top with extra virgin olive oil evenly.
- Fill and Fold the Rolls: Spoon about 2 tablespoons of the feta mixture along the bottom center of the folded phyllo sheet. Fold the edges inward over the filling then crease the dough gently to smooth it out.
- Roll the Dough: Roll the dough tightly into a log, stopping about one inch from the end. Brush more olive oil on the bottom edge and finish rolling securely. Place the roll seam side down on the prepared baking sheet.
- Brush and Bake: Brush the tops of each feta roll with additional olive oil. Place them on the center rack of the oven and bake for 20 minutes until golden and crispy.
- Prepare the Sweet Chili Sauce: While the rolls bake, combine the sweet chili sauce, soy sauce, honey, Sriracha, lemon juice, and water in a medium saucepan. Heat over low heat until just simmering, then immediately remove from heat and transfer to a serving dish.
- Finish and Serve: Once baked, brush the rolls generously with the prepared sweet chili sauce. Garnish with fresh thyme if desired and serve warm alongside the remaining sauce for dipping.

- You can substitute fresh thyme and dill with dried herbs if fresh are unavailable, adjusting quantities to taste.
