  • 1 cup heavy/whipping cream
  • 1 pound uncooked potato gnocchi
  • 1 small handful fresh basil, torn or chopped
  • Salt & pepper, to taste
  • Freshly grated parmesan cheese (optional), to taste


Instructions

  1. Heat the olive oil: Heat the olive oil in a skillet over medium-high heat. Sauté the finely chopped onion for about 5 minutes until it becomes soft and lightly golden.
  2. Add seasoning and garlic: Stir in the Dijon mustard, minced garlic, and Italian seasoning. Cook for about 1 minute while stirring, until the mixture is fragrant and well combined.
  3. Add tomatoes, cream, and gnocchi: Pour in the diced tomatoes along with their juices, the heavy cream, and the uncooked potato gnocchi. Bring the mixture to a gentle bubble, then reduce the heat to medium, cover, and let it cook for 5 minutes.
  4. Add basil and season: Stir well, then add the torn or chopped fresh basil. Season with salt and pepper to taste. Continue cooking uncovered for another 2 to 3 minutes until the gnocchi is tender and the sauce thickens slightly.
  5. Add parmesan and serve: Stir in freshly grated parmesan cheese if using, or sprinkle it on top just before serving. Serve immediately for best taste and texture.

  • Use fresh gnocchi for the best texture; frozen gnocchi may require additional cooking time.
  • For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative.
