Ingredients
Tomato Sauce
- 1 (20 ounce) can diced tomatoes
- 2 cloves garlic, minced
- 1/2 cup heavy cream

- 1/2 cup vegetable broth
Pasta and Greens
- 9 ounces refrigerated cheese tortellini
- 2 cups fresh baby spinach
- 1/2 cup fresh basil
- 1/2 cup grated Parmesan cheese, plus more for serving
Instructions
- Puree the tomatoes: Pour 14 ounces of the diced tomatoes into a food processor and blend until smooth, creating a smooth tomato base for the sauce.
- Prepare the sauce: Heat a medium skillet over medium heat. Add the pureed tomatoes, minced garlic, and heavy cream to the skillet. Bring the mixture to a boil while stirring constantly to combine. Reduce the heat to low and let the sauce simmer, stirring occasionally until it slightly thickens, about 2-3 minutes.
- Add greens and tortellini: Increase the heat back to medium. Stir in the fresh baby spinach, chopped fresh basil, grated Parmesan cheese, dried oregano, the refrigerated cheese tortellini, and the remaining diced tomatoes with their liquid. Stir continuously until the spinach wilts and the ingredients are evenly mixed.
- Simmer with broth: Pour in the vegetable broth and press the tortellini gently below the liquid so it is mostly covered. If needed, add a little more cream or broth to ensure the tortellini is submerged. Continue cooking the mixture until the tortellini is warmed through and tender, about 5 to 8 minutes.
