- 7 tbsp olive oil (or avocado oil)
- 4 tbsp vinegar (apple cider, balsamic, or lemon juice)
- 1 tbsp Dijon mustard

- 2 garlic cloves
- ⅓ tsp sea salt
- ⅓ tsp black pepper
Instructions
- Prepare the peach: Heat a small skillet over medium heat and add about 2 tablespoons of water. Add the sliced peeled and cored peach to the pan. Cook, stirring occasionally, until the water nearly evaporates, then add maple syrup. Continue cooking for 4-5 minutes until the liquid caramelizes around the peach slices. Remove from heat and allow to cool completely. If using fresh peach, simply peel and core it and use without cooking.
- Combine and blend the ingredients: In a blender, combine the cooled cooked peach (or fresh peach), olive oil, vinegar, Dijon mustard, maple syrup, garlic, sea salt, and black pepper. Blend until smooth. For a milder garlic flavor, smash garlic cloves and infuse them in the olive oil for 15 minutes before discarding and proceeding with the recipe. Transfer the vinaigrette to a jar or container and refrigerate. Use within one week if cooked peach was used, or within three days if using fresh peach.
