This creamy Peach Vinaigrette is a light, refreshing salad dressing perfect for summer. Made with cooked or fresh peaches, olive oil, vinegar, and a touch of maple syrup, it offers a naturally gluten-free and dairy-free option. Versatile and easy to prepare, it enhances green salads, fruit salads, or grilled chicken and fish with its vibrant peach flavor and smooth texture.

  • 1 large peach – peeled and cored (can be cooked or fresh)
  • 7 tbsp olive oil (or avocado oil)
  • 4 tbsp vinegar (apple cider, balsamic, or lemon juice)
  • 1 tbsp Dijon mustard
  • 2 tbsp maple syrup (or honey)
  • 2 garlic cloves
  • ⅓ tsp sea salt
  • ⅓ tsp black pepper


Instructions

  1. Prepare the peach: Heat a small skillet over medium heat and add about 2 tablespoons of water. Add the sliced peeled and cored peach to the pan. Cook, stirring occasionally, until the water nearly evaporates, then add maple syrup. Continue cooking for 4-5 minutes until the liquid caramelizes around the peach slices. Remove from heat and allow to cool completely. If using fresh peach, simply peel and core it and use without cooking.
  2. Combine and blend the ingredients: In a blender, combine the cooled cooked peach (or fresh peach), olive oil, vinegar, Dijon mustard, maple syrup, garlic, sea salt, and black pepper. Blend until smooth. For a milder garlic flavor, smash garlic cloves and infuse them in the olive oil for 15 minutes before discarding and proceeding with the recipe. Transfer the vinaigrette to a jar or container and refrigerate. Use within one week if cooked peach was used, or within three days if using fresh peach.
