Description
This creamy Broccoli Pasta is a quick, one-pan recipe that’s perfect as a meatless main or a flavorful side dish. Made with tender pasta, lightly steamed broccoli, parmesan, and a rich cream sauce.
Ingredients
- ½ cup white onion, finely chopped
- 2 cups uncooked Ditalini pasta
- 3 ½ cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon pepper
- 1 cup finely grated parmesan
- 2 cups broccoli, steamed lightly
- 2 tablespoon butter
- ½ cup heavy cream
Instructions
- In a large, deep skillet, add the onion and sauté for a few minutes until softened.
- Stir in the uncooked pasta, chicken broth, garlic powder, onion powder, and pepper.
- Cook, stirring occasionally, for about 8 minutes, until most of the liquid is absorbed and the pasta is just shy of al dente.
- Add the lightly steamed broccoli, parmesan, butter, and heavy cream.
- Reduce heat to low, cover and cook for 3–4 minutes, stirring occasionally, until the pasta and broccoli are tender and the sauce is creamy.
Notes
- Use vegetable broth to make it vegetarian.
- Ditalini pasta can be substituted with small shells or elbow macaroni.
- For extra flavor, add a pinch of red pepper flakes or a squeeze of lemon juice before serving.
