Description

Ingredients

  • 2 tablespoons unsalted butter
  • Half of a small white or yellow onion, sliced
  • 1/2 cup dry long white rice
  • 1 cup vegetable or chicken broth/stock
  • 1/2 cup dried cranberries
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans
  • 1 tablespoon fresh chopped parsley


Instructions

  1. In a large skillet over low heat, melt the butter. Add the sliced onion and a big pinch of salt. Cook, stirring occasionally, until golden brown and caramelized, about 20–30 minutes.
  2. Add the rice and stir for about 1 minute until the rice becomes slightly translucent.
  3. Stir in the broth, dried cranberries, and salt. Increase heat to medium and bring to a boil.
  4. Once boiling, reduce heat to low and cover with a lid. Simmer for 10–12 minutes or until the liquid is absorbed and the rice is tender. Add more salt if needed.
  5. Remove from heat and let the rice sit, covered, for 10 minutes.
  6. Uncover and fluff the rice with a fork. Stir in chopped pecans and parsley before serving.
