Description
This Cranberry Apple Crisp is the perfect way to use up leftover cranberries! Made with diced apples, tart cranberries, and a crunchy pecan-oat streusel topping, it’s a warm and comforting fall dessert ideal for any occasion.
Ingredients
- 2 cups fresh cranberries
- 2 small baking apples, peeled and diced into 1/2 inch pieces (about 2 cups)
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- Pinch of kosher salt
- Crisp Topping:
- 1/4 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup rolled oats
- 1/4 cup chopped pecans
- 1/2 teaspoon ground cinnamon
- Pinch of kosher salt
- 2 tablespoons cold unsalted butter, cut into 2 pieces
Instructions
- Preheat oven to 350°F (175°C). Prepare a 1-quart casserole dish, 8×8-inch pan, or 9-inch pie plate.
- In a large bowl, combine the cranberries, diced apples, granulated sugar, cornstarch, vanilla extract, and salt. Mix well and transfer to the prepared baking dish.
- In a separate bowl, prepare the streusel topping by stirring together the brown sugar, flour, oats, pecans, cinnamon, and salt.
- Cut the cold butter into the streusel mixture using a pastry blender or two forks until coarse crumbs form.
- Sprinkle the streusel evenly over the cranberry-apple mixture.
- Bake for 50–60 minutes or until the filling is bubbly and the topping is golden brown.
- Allow to cool for 15 minutes before serving. Enjoy warm or at room temperature.
Notes
- Best served warm with a scoop of vanilla ice cream or whipped cream.
- You can use Gala, Jonagold, or Golden Delicious apples for this recipe.
- Make ahead and store covered in the fridge for up to 3 days. Reheat before serving.
- Substitute walnuts or almonds if you don’t have pecans.
