Instructions
- Combine Ingredients: In a blender, add 1 cup cottage cheese, half of the shredded cheddar cheese (½ cup), ¼ cup water, 1 teaspoon taco seasoning, and 1 teaspoon chili powder. Blend until smooth, scraping down the sides as needed to fully incorporate the ingredients.
- Add Remaining Cheese: Add the rest of the shredded cheddar cheese to the blender and blend again until the mixture is very smooth.
- Serve Chilled or Room Temperature: Transfer the queso to a bowl and serve immediately if you prefer it chilled or at room temperature. The queso will be somewhat thick; if desired, stir in or blend an additional tablespoon or two of water to adjust consistency.
- Heat for Warm Queso (Optional): For warm, gooey queso, place the mixture in a microwave-safe bowl and microwave in 20-second increments for a total of 40-60 seconds, stirring after each increment until warm and smooth. Alternatively, if your blender has a heating function, you can heat the queso directly in the blender.
