This creamy cottage cheese queso is a quick and easy dip perfect for satisfying cheesy cravings. Ingredients

Cheese and Dairy

  • 1 cup cottage cheese (low-fat preferred)
  • 1 cup shredded cheddar cheese (divided roughly in half)

Liquids and Seasonings

  • ¼ cup water
  • 1 teaspoon taco seasoning
  • 1 teaspoon chili powder (adjust to taste)


Instructions

  1. Combine Ingredients: In a blender, add 1 cup cottage cheese, half of the shredded cheddar cheese (½ cup), ¼ cup water, 1 teaspoon taco seasoning, and 1 teaspoon chili powder. Blend until smooth, scraping down the sides as needed to fully incorporate the ingredients.
  2. Add Remaining Cheese: Add the rest of the shredded cheddar cheese to the blender and blend again until the mixture is very smooth.
  3. Serve Chilled or Room Temperature: Transfer the queso to a bowl and serve immediately if you prefer it chilled or at room temperature. The queso will be somewhat thick; if desired, stir in or blend an additional tablespoon or two of water to adjust consistency.
  4. Heat for Warm Queso (Optional): For warm, gooey queso, place the mixture in a microwave-safe bowl and microwave in 20-second increments for a total of 40-60 seconds, stirring after each increment until warm and smooth. Alternatively, if your blender has a heating function, you can heat the queso directly in the blender.
  5. Serve and Enjoy: Serve the queso warm or chilled with tortilla chips or your favorite dippers. Refer to notes below for additional serving ideas.
