Description

These Cottage Cheese Egg Bites are a protein-packed, creamy breakfast or snack option made by blending eggs and cottage cheese with seasonings and baking them in a muffin tin. Packed with savory melted cheese and optional add-ins, they are easy to customize, quick to prepare, and perfect for meal prep.


Ingredients

Egg Mixture

  • 8-10 large eggs
  • 1 cup cottage cheese
  • 1/2 teaspoon fine sea salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper (or to taste)

Cheese

  • 1/2 cup shredded cheese (such as medium cheddar or mozzarella)

Optional Add-Ins

  • 1/2 to 1 cup optional add-ins such as cooked bacon, chopped spinach, diced bell peppers, mushrooms, or onions (optional)


Instructions

  1. Preheat: Preheat your oven to 325˚F (163˚C). Lightly spray a non-stick muffin tin with cooking spray to prevent sticking. If you use silicone muffin cups, spraying is not necessary.
  2. Blend: In a blender, combine 8-10 large eggs, 1 cup cottage cheese, 1/2 teaspoon fine sea salt, and 1/4 teaspoon freshly ground black pepper. Blend until the mixture is smooth and fully combined, ensuring a creamy texture for the egg bites.
  3. Prepare Muffin Cups: Evenly distribute the 1/2 cup shredded cheese into each muffin cup. Add any desired optional add-ins at this point, dividing them evenly among the cups. Then pour the blended egg mixture evenly into each muffin cup, filling them about three-quarters full to allow space for rising.
  4. Bake: Place the muffin tin in the preheated oven and bake for 22-25 minutes, or until the tops are fully set and the edges begin to pull away slightly from the muffin cups. Alternatively, you can cook the egg bites in an air fryer at 300˚F for 12-14 minutes, covering loosely with foil if they start to brown too quickly.
  5. Rest and Serve: Remove the egg bites from the oven or air fryer and let them rest in the muffin tin for 5 minutes before carefully removing. This helps them set further and makes removal easier. Serve warm or store for later use.
