Description
These Cottage Cheese Brownies are a deliciously moist and rich treat made with simple ingredients like cottage cheese, cocoa powder, and peanut butter. They offer a protein-packed twist on traditional brownies, using air frying or baking methods for a quicker, healthier dessert option.
Ingredients
Brownie Ingredients
- 3/4 cup cottage cheese (160g)
- 1 large egg
- 1/2 cup unsweetened cocoa powder (42g)
- 1/2 cup powdered sweetener (80g)
- 2 tbsp smooth peanut butter (32g)
- Pinch of sea salt (optional)
Instructions
- Prepare Brownie Batter: Place all the ingredients into a food processor or a large mixing bowl. Blend or mix until the batter is smooth and thick, stopping occasionally to scrape down the sides to ensure everything is fully incorporated.
- Prepare Baking Dish: Grease a 5×5 inch container and line it with parchment paper to prevent sticking and make removal easier.
- Fill the Container: Pour the brownie batter into the prepared container, spreading it evenly and smoothing out the top with a spatula.
- Air Fryer Method: Preheat your air fryer to 160°C (320°F). Place the baking container with the batter into the air fryer basket and cook for 19 to 22 minutes, ideally around 21 minutes. Accurately monitor the cooking as times may vary.
- Oven Method: Alternatively, preheat your oven to 180°C (350°F). Place the baking dish on the middle rack and bake for 24 to 26 minutes until set and cooked through.
- Cooling and Setting: Allow the brownies to cool to room temperature outside the oven or air fryer. Then chill the brownies in the refrigerator for at least 30 minutes to let them set fully. Only after chilling, cut into portions and serve.
Notes
- Using a food processor gives the smoothest batter texture but mixing by hand in a bowl is also effective.
- Make sure to properly grease and line the baking dish to prevent sticking.
- Cooking times may vary depending on your air fryer or oven model; start checking a few minutes before the minimum time to avoid overcooking.
- Chilling the brownies after baking is essential as it helps them firm up and improves cutting.
- You can substitute powdered sweetener with powdered sugar if preferred, but adjust sweetness accordingly.
