Instructions
- Mix Dry Ingredients: In a large bowl, whisk together almond flour, chocolate protein powder, cocoa powder, and kosher salt until well combined, ensuring there are no lumps for a smooth dough.
- Add Wet Ingredients: Add almond butter, almond milk, maple syrup, and vanilla bean paste to the dry ingredients. Use a rubber spatula to fold everything together gently until the mixture is well combined and forms a cohesive dough.
- Form Balls: Scoop heaping tablespoons (about 20 g each) of the dough and roll them into 12 equal balls. Place the balls on a parchment-lined baking sheet. If the dough is sticky or the balls are too soft, freeze them for 15 minutes to firm up before proceeding.
- Melt Chocolate Mixture: In a medium heatproof bowl, microwave dark chocolate and refined coconut oil in 30-second increments, stirring between each, until smooth and fully melted—usually about 90 seconds total.
