Ingredients

Wet Ingredients

  • 1/3 cup almond butter
  • 2 tbsp almond milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla bean paste

Coating

  • 6 oz dark chocolate (60% cacao, good-quality chips or chopped bars)
  • 1 tbsp refined coconut oil
  • 2 tbsp mini rainbow-colored chocolate chips


Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together almond flour, chocolate protein powder, cocoa powder, and kosher salt until well combined, ensuring there are no lumps for a smooth dough.
  2. Add Wet Ingredients: Add almond butter, almond milk, maple syrup, and vanilla bean paste to the dry ingredients. Use a rubber spatula to fold everything together gently until the mixture is well combined and forms a cohesive dough.
  3. Form Balls: Scoop heaping tablespoons (about 20 g each) of the dough and roll them into 12 equal balls. Place the balls on a parchment-lined baking sheet. If the dough is sticky or the balls are too soft, freeze them for 15 minutes to firm up before proceeding.
  4. Melt Chocolate Mixture: In a medium heatproof bowl, microwave dark chocolate and refined coconut oil in 30-second increments, stirring between each, until smooth and fully melted—usually about 90 seconds total.
  5. Dip and Coat: Working one at a time, drop each brownie bite into the melted chocolate. Spoon more chocolate over each bite to coat thoroughly. Use a fork to lift the bite out, letting excess chocolate drip back into the bowl, then place it back on the parchment-lined baking sheet.
