  • 2 large egg whites

  • ¼ cup feta cheese
  • 1 teaspoon Italian seasoning
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 10-inch whole wheat flour tortilla
  • Optional: 1 egg yolk


Instructions

  1. Whisk the Egg Whites: Place the egg whites into a bowl and whisk them until fully combined, then set aside for later use.
  2. Heat the Pan: Heat a large skillet over medium heat and add the olive oil reserved from the sun-dried tomatoes.
  3. Sauté Spinach: When the oil is fragrant, add the chopped spinach to the skillet and sauté for about 2-3 minutes until wilted.
  4. Add Flavorings: Add the minced garlic, chopped sun-dried tomatoes, salt, and pepper to the spinach mixture. Toss and sauté for an additional minute to blend the flavors.

  6. Pour Egg Whites: Carefully pour the whisked egg whites over the spinach mixture to cover it evenly, using a spatula to maintain the circular shape.
