Description

This Cool Ranch Hummus is a vibrant twist on classic hummus, blending zesty apple cider vinegar with herbs like dill and savory onion and garlic powders to create a creamy, flavorful dip. Perfect for snacking or as a party appetizer, it provides a deliciously tangy and cheesy option when nutritional yeast is added.

Ingredients

Main Ingredients

  • 18 oz cooked chickpeas OR 2 cans unsalted and drained chickpeas
  • 1/3 cup water
  • 1/4 cup apple cider vinegar
  • 2 1/2 tbsp oil (such as olive oil) OR more water for desired consistency
  • 1 tbsp onion powder
  • 2 tsp dried dill
  • 1 1/2 tsp garlic powder
  • 1 to 1 1/4 tsp salt, or more to taste
  • Optional: 1/4 cup nutritional yeast for a cheesy flavor

Instructions

  1. Prepare Ingredients: Drain and rinse the chickpeas if using canned. Measure out all spices and liquids to have everything ready for blending.
  2. Combine in Blender: Place the cooked chickpeas, water, apple cider vinegar, oil (or additional water if preferred), onion powder, dried dill, garlic powder, and salt into a high-quality blender or food processor.
  3. Process Until Smooth: Blend on high speed until the mixture is completely smooth and creamy. This usually takes a couple of minutes—stop and scrape down the sides as needed.
  4. Add Nutritional Yeast (Optional): If a cheesy flavor is desired, add the nutritional yeast and blend again briefly to incorporate.
  5. Adjust Consistency and Seasoning: Taste the hummus and add more salt or water/oil if a thinner consistency is preferred. Blend again to combine.
  6. Store: Transfer the Cool Ranch Hummus to an airtight container and refrigerate. It can be stored covered in the refrigerator for up to 4 days.

Notes

  • Using unsalted chickpeas allows control over sodium levels.
  • For a vegan and dairy-free cheesy flavor, nutritional yeast is a great addition.
  • The oil can be substituted with more water for a lower-fat version.
  • This hummus can be served with fresh vegetables, chips, or as a spread on sandwiches.
  • Ensure the blender or food processor is powerful for the smoothest texture.
  • Adjust seasoning to taste, especially salt, depending on your preference and dietary needs.
