Description

Cold Veggie Pizza is a colorful, refreshing appetizer featuring a soft baked crust, creamy herbed topping, and crisp fresh vegetables. Ingredients

1 teaspoon active dry or instant yeast

1 teaspoon granulated sugar

3/4 cup warm water (100–110°F / 38–43°C)

2 cups all-purpose or bread flour, plus more for dusting

1/4 cup (4 Tbsp) melted butter, divided

1 teaspoon garlic powder

1 teaspoon salt

12 ounces cream cheese, softened

1/2 cup plain Greek yogurt, room temperature

2 teaspoons fresh dill, chopped (or 1 teaspoon dried)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

34 cups fresh vegetables (broccoli, cucumber, bell pepper, cherry tomatoes, etc.), chopped

1/3 cup freshly grated Parmesan cheese

1 tablespoon chopped scallion

Optional: shredded carrots


Instructions

  1. Whisk yeast, sugar, and warm water in a large bowl. Let sit 5–10 minutes until foamy.
  2. Add flour, 2 tablespoons melted butter, garlic powder, and salt. Mix until combined, then knead for 6–8 minutes until smooth and elastic. Cover and let rise for 1 hour.
  3. Preheat oven to 450°F (232°C). Roll dough into a 10×15-inch rectangle. Transfer to a lined baking sheet, dimple with fingers, brush with remaining butter, and bake 17–20 minutes until golden. Cool completely.
  4. Beat cream cheese and Greek yogurt until smooth. Mix in dill, garlic powder, onion powder, salt, and pepper.
  5. Spread cream cheese mixture evenly over cooled crust. Top with chopped vegetables, Parmesan, scallions, and optional carrots. Cut into squares and serve immediately, or refrigerate up to 24 hours.

Notes

  • Use sour cream instead of Greek yogurt for a richer topping.
  • Add olives, artichokes, or ranch seasoning for variation.
