Description

This Coconut Rice recipe offers a fragrant and creamy side dish made by cooking jasmine rice in full-fat coconut milk. Perfectly tender with a delicate coconut flavor, it can be customized with lime juice, cilantro, and crunchy cashews for extra zest and texture, making it an ideal complement to a variety of dishes.

Ingredients

Base Ingredients

  • 1 cup uncooked long grain jasmine rice, rinsed
  • 1 (14-ounce) can full-fat coconut milk

Optional Additions

  • ½ teaspoon sea salt
  • Juice and zest of 1 lime
  • ½ cup chopped cilantro
  • Chopped cashews, for garnish

Instructions

  1. Combine Ingredients: In a pot, combine the rinsed jasmine rice and the full can of coconut milk. Bring the mixture to a boil over medium-high heat.
  2. Simmer: Once boiling, cover the pot and reduce the heat to low. Let it simmer gently for 15 minutes, or until the liquid is fully absorbed and the rice is tender.
  3. Rest the Rice: Remove the pot from the heat but keep it covered. Let the rice sit undisturbed for 10 minutes to finish steaming and ensure fluffiness.
  4. Fluff and Season: After resting, fluff the rice gently with a fork. If desired, stir in the sea salt, lime juice, lime zest, and chopped cilantro. Adjust seasoning to your preference.
  5. Serve: Transfer the rice to a serving dish and sprinkle chopped cashews on top. Serve warm as a delightful side dish to your favorite meals.

Notes

  • For fluffier rice with a milder coconut flavor, replace the 14-ounce can of coconut milk with a mixture of ¾ cup coconut milk and ¾ cup water.
  • Rinsing the rice before cooking removes excess starch for better texture.
  • Adding lime juice and zest brightens the flavor profile, complementing many Asian or tropical-inspired dishes.
  • Cashews add a lovely crunch and nutty flavor, but can be omitted for a nut-free version.
