Description

This Coconut Curry Basil Chicken recipe offers a flavorful and aromatic dish combining tender chicken pieces simmered in a rich coconut curry sauce with fresh Thai basil, kale or spinach, and a subtle heat from jalapeños. Perfectly balanced with tamari, honey, and lime juice, it’s a quick and satisfying meal served over steamed rice, ideal for dinner in just 30 minutes.

Ingredients

Chicken and Curry Base

  • 2 pounds chicken breasts or thighs, cut into bite-size pieces
  • 2 tablespoons regular or spicy curry powder
  • 2 tablespoons salted butter or olive oil
  • 1 yellow onion, sliced or chopped
  • 2 cloves garlic, chopped
  • 1-2 jalapeños, seeded if desired, chopped

Curry Sauce and Greens

  • 1 can (13.5 oz) full-fat coconut milk
  • 2 teaspoons tamari, soy sauce, or fish sauce
  • 2 teaspoons honey
  • 2 cups finely shredded kale or spinach
  • Salt and black pepper, to taste

Finishing Touches

  • 1 cup fresh Thai basil or sweet basil leaves
  • 1/2 cup roasted cashews (optional)
  • 2 tablespoons fresh lime juice
  • Steamed rice, for serving

Instructions

  1. Sauté the Chicken and Aromatics: In a large skillet over medium-high heat, combine the chicken pieces, butter or olive oil, curry powder, and sliced onions. Cook for 3 minutes, allowing the chicken to start browning and the onions to soften. Add the chopped garlic and jalapeños, cooking for an additional 2 minutes until fragrant.
  2. Add Coconut Milk and Greens: Pour in the full-fat coconut milk, tamari (or soy/fish sauce), and honey. Stir well to combine. Add the finely shredded kale or spinach, then season with salt and black pepper to your preference. Continue cooking for 5 to 10 minutes, stirring occasionally, until the chicken is fully cooked through and the greens have wilted.
  3. Finish with Basil, Lime, and Cashews: Remove the skillet from heat and stir in the fresh Thai or sweet basil leaves, freshly squeezed lime juice, and roasted cashews if using. Mix gently to combine all flavors harmoniously.
  4. Serve: Spoon the coconut curry basil chicken and sauce over steamed rice. Garnish with extra fresh basil leaves and a wedge of lime if desired. Enjoy your aromatic, flavorful meal!

Notes

  • Use either chicken breasts or thighs based on your preference; thighs provide a juicier texture.
  • Adjust the spiciness by varying the amount of jalapeños and choosing between regular or spicy curry powder.
  • Substitute tamari with soy sauce or fish sauce according to availability and dietary preferences.
  • The roasted cashews are optional but add a pleasant crunch and nutty flavor.
  • For a dairy-free version, use olive oil instead of butter.
  • Serve with jasmine or basmati rice for the best flavor combination.
