Instructions

  1. Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the cubed chicken breasts and sprinkle with curry powder, chili powder, salt, and pepper. Toss well to evenly coat the chicken with the spices. Cook for about 5 minutes until the chicken begins to brown on the outside.
  2. Sauté the Onion: Add the chopped onion to the skillet with the chicken. Continue cooking for approximately 5 minutes, stirring occasionally, until the onion becomes translucent and soft.
  3. Add Aromatics: Stir in the finely minced garlic and chopped jalapeno pepper. Cook for about 30 seconds or until the garlic releases its fragrance and becomes aromatic, being careful not to burn it.
  4. Simmer with Liquids: Pour in the chicken broth and coconut milk into the skillet. Bring the mixture to a boil, then reduce the heat to medium and let it simmer gently for 5 more minutes.
