Ingredients
3 large eggs, separated
⅓ cup cottage cheese
¼ teaspoon cream of tartar
½ teaspoon baking powder
¼ teaspoon salt
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper or silicone mat.
- In a clean bowl, beat egg whites with cream of tartar on high until stiff peaks form (2–4 minutes).
- In another bowl, whisk egg yolks with cottage cheese, baking powder, and salt until smooth.
- Fold the whipped egg whites into the yolk mixture gently in three additions, avoiding deflation.
- Spoon batter into 3–4 inch rounds on baking sheet.
- Bake for 25–30 minutes until golden and firm.
- Cool for 5–10 minutes before serving or storing.
Notes
- Ensure no yolk contaminates egg whites or they won’t whip properly.
- Flavor with herbs, spices, or vanilla for variety.
- Store in fridge and reheat in skillet or toaster for best results.
