Description

Cottage Cheese Cloud Bread is a light, fluffy, high-protein and low-carb bread substitute made with just five ingredients—ideal for keto and gluten-free diets.


Ingredients

3 large eggs, separated

⅓ cup cottage cheese

¼ teaspoon cream of tartar

½ teaspoon baking powder

¼ teaspoon salt


Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper or silicone mat.
  2. In a clean bowl, beat egg whites with cream of tartar on high until stiff peaks form (2–4 minutes).
  3. In another bowl, whisk egg yolks with cottage cheese, baking powder, and salt until smooth.
  4. Fold the whipped egg whites into the yolk mixture gently in three additions, avoiding deflation.
  5. Spoon batter into 3–4 inch rounds on baking sheet.
  6. Bake for 25–30 minutes until golden and firm.
  7. Cool for 5–10 minutes before serving or storing.

  • Ensure no yolk contaminates egg whites or they won’t whip properly.
  • Flavor with herbs, spices, or vanilla for variety.
