Description

Cinnamon Sugar Donut Bread is a delightful fusion of moist, tender quick bread and the sweet, spiced sugar coating reminiscent of a classic sugar donut. Perfect for breakfast or brunch, this bread delivers a warm, comforting flavor with hints of cinnamon and nutmeg, topped with a buttery cinnamon-sugar crust that makes every bite irresistible.

Ingredients

Bread

  • 2 cups (250 g) all-purpose flour
  • 1 ½ cups (300 g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 ¼ cups (306 g) whole milk
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon vanilla extract

Spiced Sugar Coating

  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • ½ cup (100 g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C). Spray an 8 ½ x 4 ½-inch loaf pan with nonstick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and kosher salt. Stir these ingredients together thoroughly to distribute the leavening and seasoning evenly.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the whole milk, large egg, melted unsalted butter, and vanilla extract until fully blended and smooth.
  4. Make the Batter: Pour the wet mixture into the dry ingredients. Stir gently with a spatula just until combined; avoid overmixing to keep the bread tender. The batter will be slightly runny.
  5. Bake the Bread: Pour the batter into the prepared loaf pan, spreading it evenly. Place in the oven and bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs and the top is golden brown.
  6. Cool the Bread: Remove the pan from the oven and allow the bread to cool for about 10 minutes in the pan. Then carefully transfer the loaf onto a large piece of parchment paper to cool slightly and prepare for topping.
  7. Apply Butter Coating: While the bread is still warm, gently brush the entire surface with the melted butter designated for the topping. This helps the sugar and spice mixture adhere well.
  8. Add Spiced Sugar Topping: In a small bowl, mix together granulated sugar, ground cinnamon, and ground nutmeg. Evenly sprinkle this mixture all over the butter-coated bread, turning the loaf as needed to cover all sides thoroughly. Save any leftover topping for later use.

Notes

  • Do not overmix the batter to avoid a dense bread; a slightly lumpy batter is okay.
  • Ensure the bread is still warm when applying the butter and sugar topping for better adhesion.
  • Leftover spiced sugar topping can be stored in an airtight container and used for other baked goods or toast.
  • You can substitute whole milk with buttermilk for a tangier flavor and even moister texture.
  • Make sure the egg is at room temperature to achieve optimal mixing and texture.
