Description

Ingredients
- 1 tbsp olive oil
- 1/2 onion, diced
- 1 3/4 cups long grain rice
- 1 tsp garlic salt
- 1 tsp cumin
- 3 1/2 cups chicken broth
- Zest and juice of 2 limes
- 1 large handful cilantro, chopped (about 1 cup)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Sauté diced onion for 3 to 5 minutes, or until translucent.
- Add rice, garlic salt, and cumin. Stir and toast the rice for 3 to 5 minutes.
- Add chicken broth, lime zest, and lime juice. Bring to a boil.
- Reduce heat to low, cover, and simmer for 18 to 20 minutes, or until rice is tender.
- Fluff the rice with a fork and stir in the chopped cilantro.
- Adjust lime juice to taste and serve warm.
Notes
- Use vegetable broth to make this dish vegetarian.
- For extra lime flavor, add a final squeeze of lime juice just before serving.
