Description

Cilantro Lime Rice is a zesty and aromatic side dish made with fluffy rice, fresh lime juice, and chopped cilantro. It’s the perfect complement to Mexican-inspired meals or grilled meats.


Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 1 3/4 cups long grain rice
  • 1 tsp garlic salt
  • 1 tsp cumin
  • 3 1/2 cups chicken broth
  • Zest and juice of 2 limes
  • 1 large handful cilantro, chopped (about 1 cup)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sauté diced onion for 3 to 5 minutes, or until translucent.
  3. Add rice, garlic salt, and cumin. Stir and toast the rice for 3 to 5 minutes.
  4. Add chicken broth, lime zest, and lime juice. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18 to 20 minutes, or until rice is tender.
  6. Fluff the rice with a fork and stir in the chopped cilantro.
  7. Adjust lime juice to taste and serve warm.

Notes

  • Use vegetable broth to make this dish vegetarian.
  • For extra lime flavor, add a final squeeze of lime juice just before serving.
