Ingredients
Wet Ingredients
- 1/4 cup coconut oil
- 1/3 cup maple syrup (substitute with honey or your favorite sweetener)
- 1 teaspoon vanilla extract (optional)
Dry Ingredients
- 4 tablespoons unsweetened cocoa powder
- 1/4 teaspoon sea salt
- 3 cups old fashioned rolled oats
Mix-In
- 1/2 cup dark chocolate chips (dairy or non-dairy; substitute with your favorite variety of chocolate chips)
Instructions
- Preheat Oven and Prepare Pan: Preheat the oven to 325°F (165°C). Line a large rimmed baking sheet with parchment paper and set aside to ensure easy removal and cleanup.
- Melt and Mix Wet Ingredients: Place the coconut oil in a large bowl and heat in the microwave for 30-40 seconds until melted. If your coconut oil is already liquid, you can skip this step. Add the maple syrup, cocoa powder, vanilla extract, and sea salt to the bowl, then whisk everything together until fully combined. If the mixture begins to solidify after whisking, microwave it again for 20-30 seconds to keep it smooth.
- Add Oats and Stir: Add the rolled oats to the wet mixture and stir thoroughly until all the oats are well coated with the chocolate mixture.
- Spread Granola on Baking Sheet: Pour the granola mixture onto the prepared baking sheet and spread it evenly to about 1/4 inch thick. Press it firmly to pack the oats down; this helps create large clusters in the final granola.
- Bake the Granola: Place the pan in the middle rack of the preheated oven. Bake for 25 minutes, rotating the pan halfway through at 15 minutes, but do not stir during baking to allow clusters to form. The granola will be done when it’s golden and fragrant.
- Cool the Granola: Remove the granola from the oven and let it cool completely on the baking sheet without stirring. Cooling solidifies the clusters and creates that perfect crunch.
- Add Chocolate Chips and Serve: Once the granola has cooled, break it into chunks and stir in the dark chocolate chips. Optionally, sprinkle additional flaky sea salt to enhance the flavors. Enjoy your homemade chocolate granola as a snack or breakfast topping!
