Description
Chocolate Brownie Energy Balls are a no-bake, nutrient-dense snack made with Medjool dates, raw cashews, and cacao powder. These energy bites are rich, chewy, and perfect for a quick, healthy treat on the go.
Ingredients
- 1 cup Medjool dates
- 1 cup raw cashews
- 1/4 cup raw cacao powder
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1 Tbsp cacao powder (for dusting, optional)
- 1 cup hot water (for soaking dates)
Instructions
- Soak dates in 1 cup of hot water for 10 minutes or until soft. Drain and remove pits.
- Add cashews to a high-speed blender or food processor and pulse until finely chopped (do not overprocess).
- Add soaked dates, cacao powder, vanilla extract, and sea salt. Pulse until the mixture becomes sticky and forms a dough-like consistency. Scrape down sides as needed.
- Using a cookie scoop or spoon, scoop heaping tablespoons of the mixture and roll into 1-inch balls with your hands.
- If desired, roll the balls in cacao powder to coat.
- Refrigerate the energy balls for 20 minutes to set.
- Serve and enjoy!
Notes
- Store in an airtight container in the fridge for up to 10 days.
- Can be frozen for up to 2 months.
- Optional: Add a tablespoon of chia seeds or flaxseeds for added fiber and nutrients.
