Description

Chocolate Brownie Energy Balls are a no-bake, nutrient-dense snack made with Medjool dates, raw cashews, and cacao powder. These energy bites are rich, chewy, and perfect for a quick, healthy treat on the go.


Ingredients

  • 1 cup Medjool dates
  • 1 cup raw cashews
  • 1/4 cup raw cacao powder
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 Tbsp cacao powder (for dusting, optional)
  • 1 cup hot water (for soaking dates)

Instructions

  1. Soak dates in 1 cup of hot water for 10 minutes or until soft. Drain and remove pits.
  2. Add cashews to a high-speed blender or food processor and pulse until finely chopped (do not overprocess).
  3. Add soaked dates, cacao powder, vanilla extract, and sea salt. Pulse until the mixture becomes sticky and forms a dough-like consistency. Scrape down sides as needed.
  4. Using a cookie scoop or spoon, scoop heaping tablespoons of the mixture and roll into 1-inch balls with your hands.
  5. If desired, roll the balls in cacao powder to coat.
  6. Refrigerate the energy balls for 20 minutes to set.
  7. Serve and enjoy!

  • Store in an airtight container in the fridge for up to 10 days.
  • Can be frozen for up to 2 months.
  • Optional: Add a tablespoon of chia seeds or flaxseeds for added fiber and nutrients.
