Ingredients
For the Chicken:

Instructions
- Prep the Chicken: Slice each chicken breast in half lengthwise to create thinner cutlets. Place them in a mixing bowl.
- Season the Chicken: Add salt, black pepper, garlic powder, onion powder, paprika, chipotle powder, and dried dill to the chicken in the bowl. Toss well to evenly coat all pieces with the spices.
- Make the Honey Mustard Sauce: In a medium mixing bowl, combine mayonnaise, dijon mustard, yellow mustard, honey, apple cider vinegar, paprika, garlic powder, and onion powder. Whisk the ingredients until smooth and well combined. Set aside.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add olive oil once hot. Place the spiced chicken breasts into the skillet and cook for 4-6 minutes on each side, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
- Melt the Cheese: Once the chicken is cooked through, remove the skillet from the heat. Place one slice of cheddar cheese atop each chicken breast. Cover the pan with a lid to let the cheese melt slightly, about 1-2 minutes.
- Assemble the Sandwiches: Remove the chicken breasts from the skillet. On the bottom halves of the toasted brioche buns, spread some honey mustard sauce. Layer with romaine lettuce, tomato slices, red onion, pickles, and then place the cheesy chipotle chicken on top. Cover with the top bun and serve immediately.
