Instructions
- Preheat the oven: Set your oven to 350 degrees Fahrenheit (175 degrees Celsius) to get it ready for baking the cookies.
- Prepare chickpeas: Drain and rinse the canned chickpeas thoroughly to remove any excess salt or brine. Add them to a food processor for blending.
- Add other ingredients: To the food processor with chickpeas, add the almond or peanut butter, oat flour, sugar, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt. Do not add the chocolate chips yet.
- Blend into dough: Process the mixture until it achieves a smooth consistency without any remaining chickpea chunks. The texture may be slightly bumpy but should be uniform overall.
- Incorporate chocolate chips: Add in the 2/3 cup of chocolate chips and pulse a few times just until they are evenly mixed into the cookie dough.
- Scoop dough onto baking sheet: Using a cookie scoop, place dollops of dough onto a baking sheet lined with parchment paper. These cookies will be thick and may spread a little while baking.
- Flatten slightly and add extra chips: Press a few additional chocolate chips on top of each cookie ball for decoration and extra chocolate flavor.
- Bake the cookies: Place the baking sheet in the preheated oven and bake for 11 to 15 minutes. Midway through baking, if you want the cookies to spread more, gently slam the cookie sheet down once.
