Ingredients
4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon pepper
8 fresh basil leaves
4 slices provolone cheese
Prosciutto (optional, if you like extra flavor)
Instructions
- Sprinkle the chicken breasts with pepper on both sides.
- In a large skillet coated with cooking spray, cook the chicken over medium heat for 4-5 minutes on each side or until the internal temperature reaches 165°F.
- Transfer the cooked chicken breasts to an ungreased baking sheet.
- Place 2 basil leaves on each chicken breast. Add a slice of prosciutto (if using) and then top with a slice of provolone cheese.
- Place the baking sheet under the broiler, 6-8 inches from the heat source. Broil for 1-2 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and serve hot, garnished with extra fresh basil if desired.
