Description

This Copycat Olive Garden Chicken Gnocchi Soup is a creamy, hearty, one-pot meal loaded with tender chicken, pillowy potato gnocchi, and fresh vegetables. Perfectly seasoned and ready in under an hour, it’s a cozy comfort food you can make right at home.


Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 1 small white onion, diced
  • 1 cup chopped celery
  • 3 tablespoons all-purpose flour
  • 4 cloves garlic, minced
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • ½ teaspoon sea salt (more to taste)
  • ¼ teaspoon black pepper (more to taste)
  • 8 cups low sodium chicken broth
  • 2 pounds boneless, skinless chicken breasts
  • 16 ounces potato gnocchi
  • ¾ cup heavy cream
  • 2 cups fresh spinach, roughly chopped
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced celery, onions, and carrots. Sauté for 3–4 minutes until onions are translucent.
  3. Stir in flour, garlic, oregano, thyme, salt, and pepper. Cook for 2 minutes to eliminate raw flour taste.
  4. Pour in chicken broth and bring to a boil. Add chicken breasts, reduce heat to medium, cover, and cook for about 20 minutes or until chicken is fully cooked.
  5. Remove the chicken, shred or slice, and return it to the pot.
  6. Add potato gnocchi. Bring the soup back to a boil, then reduce to a gentle simmer for 4–5 minutes until gnocchi is tender.
  7. Stir in heavy cream and chopped spinach. Simmer for an additional 1–2 minutes until spinach wilts.
  8. Taste and adjust seasoning with salt and pepper as needed. Serve warm.

Notes

  • For a lighter version, substitute half-and-half or milk for heavy cream.
  • You can use rotisserie chicken instead to save time—just skip cooking the chicken and stir it in with the gnocchi.
  • This soup thickens as it sits—add extra broth when reheating if needed.
