Ingredients
Fritter Mixture
- 2 1/2 cups shredded zucchini
- 1 1/2 lb ground chicken breast
- 1 egg

- 1/8 tsp cayenne pepper

Instructions
- Prepare Zucchini: Shred 2 1/2 cups of zucchini using a box grater. Squeeze out the excess juices thoroughly and transfer the shredded zucchini into a large mixing bowl to prevent soggy fritters.
- Mix Ingredients: Add the ground chicken breast, egg, pressed garlic clove, salt, black pepper, smoked paprika, and cayenne pepper to the bowl with the shredded zucchini. Mix all the ingredients thoroughly until well combined into a uniform mixture.
- Heat Oil: Pour enough avocado oil into a skillet to cover its entire surface. Heat the skillet over medium-high heat until the oil is hot but not smoking. This high smoke point oil is ideal for frying to achieve a crisp exterior.
- Cook Fritters: Using a large trigger release cookie scoop or spoon, scoop portions of the zucchini and chicken mixture and carefully place them into the hot oil, spacing them apart. Cook each fritter for about 3 to 4 minutes on each side, or until they develop a deep golden brown crust and are cooked through.
- Serve: Remove the cooked fritters from the skillet and drain briefly on paper towels if desired. Serve warm, accompanied by ranch dressing or sour cream for dipping.
