This Cherry Tomato Salad is a fresh and vibrant side dish that celebrates the classic flavor pairing of tomatoes and basil. Tossed with a zesty mustard vinaigrette and thinly sliced red onion, it’s the perfect companion for grilled meats, pastas, or crusty bread.
Ingredients
- 750g / 1.5 lb cherry or grape tomatoes (or large tomatoes, chopped)
- 1/2 red onion, finely sliced
- 1/2 cup basil leaves, tightly packed and finely sliced
- Dressing:
- 1 tbsp cider vinegar
- 2.5 tbsp extra virgin olive oil
- 1/2 tsp Dijon mustard
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- In a small jar or bowl, shake or whisk together the cider vinegar, olive oil, Dijon mustard, salt, and pepper until emulsified. Taste and adjust seasoning as needed.
- Cut cherry or grape tomatoes in half. If using large tomatoes, cut into wedges and then bite-sized pieces.
- In a mixing bowl, combine the tomatoes, red onion, and basil.
- Pour the dressing over the salad and gently toss to coat.
- Serve immediately for best texture and flavor.
Notes
- Best served fresh. Avoid making too far ahead as the tomatoes will release juices and soften.
- Other vinegar options: red wine vinegar or white wine vinegar can be used in place of cider vinegar.
- For milder onion flavor, soak sliced red onions in cold water for 10 minutes, then drain before using.
- Add crumbled feta or fresh mozzarella for a more filling salad.
