Ingredients

Chicken

  • 2 large chicken breasts, trimmed of fat and diced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Potatoes

  • 4-5 medium russet potatoes, washed, scrubbed, peeled, and diced
  • 2 tbsp extra virgin olive oil
  • 1/2 tbsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

Other Ingredients

  • 2 tbsp butter
  • 1 1/2 cups garlic Parmesan sauce
  • 1 cup shredded mozzarella cheese


Instructions

  1. Prepare the Potatoes: Peel and dice the russet potatoes and place them in a large mixing bowl. Add the extra virgin olive oil, garlic powder, smoked paprika, salt, and pepper. Toss everything together until all the potatoes are evenly coated with the seasoning.
  2. Air Fry the Potatoes: Transfer the seasoned potatoes to the basket of an air fryer. Cook at 400°F for 20 minutes, shaking the basket halfway through cooking to ensure even crisping. Once done, set the potatoes aside.
  3. Season the Chicken: In a small bowl, add the diced chicken breasts along with Italian seasoning and a pinch of salt and pepper. Toss to combine evenly and set aside.
  4. Cook the Chicken: In a large oven-safe skillet, melt the butter over medium-high heat. Add the seasoned chicken and cook, stirring often, until the chicken is cooked through and no longer pink in the center.
  5. Combine Chicken, Potatoes, and Sauce: Add the air-fried potatoes and garlic Parmesan sauce to the skillet with the cooked chicken. Stir well to evenly combine all ingredients, then spread the mixture out into an even layer in the skillet.
