Ingredients

Special Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons minced dill pickles
  • 1 tablespoon minced white onion
  • 2 teaspoons white vinegar

Quesadillas

  • 1 lb ground beef
  • Salt and pepper, to taste
  • Ketchup, to taste (approximately 1/4 cup)
  • Mustard, to taste (approximately 2 tablespoons)
  • 4 large tortillas (Mission gluten free tortillas recommended)
  • 2 cups shredded cheddar cheese
  • Chopped onions (optional)
  • Chopped pickles (optional)
  • Chopped cooked bacon (optional)
  • Nonstick cooking spray


Instructions

  1. Make the Special Sauce: In a bowl, combine mayonnaise, ketchup, minced dill pickles, minced white onion, and white vinegar. Stir thoroughly to blend all ingredients. This sauce can be prepared several days in advance and refrigerated to enhance the flavors.
  2. Brown the Ground Beef: Heat a skillet over medium heat. Add the ground beef, season with salt and pepper, and cook thoroughly until browned and no longer pink, breaking it apart with a spatula. Drain excess fat to avoid greasiness.
  3. Season the Beef Mixture: Transfer the cooked beef to a mixing bowl. Add ketchup and mustard to taste, generally two parts ketchup to one part mustard, to create a saucy, flavorful filling rather than a dry mixture. Mix well.
  4. Heat Cooking Surface: Preheat a large skillet or electric griddle over medium heat and lightly spray it with nonstick cooking spray to prevent sticking.
  5. Assemble the Quesadilla: Place one tortilla on the heated skillet. Sprinkle a thin layer of shredded cheddar cheese evenly over the tortilla. Spoon the saucy ground beef mixture evenly on top.
