Description

Sweet, juicy pineapple slices caramelised over heat and served with coconut, fresh lime, and optional creamy yoghurt. A quick, healthy tropical treat that works as a dessert, snack, or side.


Ingredients

1 pineapple (or 1 tin of pineapple slices in juice)

1 lime, cut into wedges

4 teaspoons desiccated coconut

4 tablespoons zero-fat Greek-style yoghurt (optional)


Instructions

  1. Prepare the Pineapple: Cut off the top and bottom, remove the peel, and slice into 4 thick rings. Remove the core. If using tinned pineapple, drain well.
  2. Cook the Pineapple: Barbecue for 2–3 minutes on each side until lightly charred. Alternatively, use a hot griddle pan or oven grill.
  3. Serve: Place slices on plates, sprinkle with coconut, and serve with lime wedges and a spoonful of yoghurt if desired.

Notes

  • Swap pineapple for mango, peaches, strawberries, or bananas.
  • Add a drizzle of honey for more sweetness.
  • Sprinkle with cinnamon before grilling for a spiced version.
  • Serve with vanilla ice cream instead of yoghurt for dessert.
