These crispy and savory Cauliflower Tots are a delicious low-carb alternative to traditional potato tots, made with steamed cauliflower, cheese, and almond flour. Baked until golden and crunchy, they are perfect as a snack or side dish, served with ketchup or your favorite dipping sauce.

Instructions
- Preheat the oven: Preheat your oven to 400 degrees Fahrenheit and line a rimmed baking sheet with parchment paper to prevent sticking.
- Steam the cauliflower: Bring an inch of water to a boil in a medium saucepan. Place the 4 cups of cauliflower florets in a steamer basket over the boiling water, cover, and steam for 5 minutes until fork-tender.
- Process and drain cauliflower: Working in batches, pulse the steamed cauliflower in a food processor for about 10 seconds until it becomes a fine meal. Transfer each batch to a thin dish towel or cheesecloth, gather the edges, and squeeze out as much moisture as possible over the sink. Transfer the drained cauliflower meal to a large mixing bowl.
- Combine ingredients: Add the grated onion, 1 large egg, 1/4 cup parmesan, 1/4 cup cheddar, 1/4 cup blanched almond flour, and salt and pepper to taste to the cauliflower in the bowl. Mix thoroughly with a rubber spatula to create a cohesive mixture. Let it rest for 5 minutes to allow the ingredients to meld together.
- Shape the tots: Generously spray the prepared baking sheet with avocado oil cooking spray. Using your hands, form about 34 small tots, each approximately 1 inch long and 1/2 inch wide. Space them about 1 inch apart on the baking sheet. Spray the tops of the tots generously with cooking spray as well.
- Bake the tots: Place the baking sheet in the preheated oven and bake the tots for about 20 minutes until golden brown. Flip each tot carefully and bake for an additional 10 minutes until evenly browned and crispy on all sides.
- Serve: While still hot, sprinkle the tots with additional sea salt. Serve warm with ketchup or your preferred dipping sauce for a tasty treat.
- Storage and reheating: Store any leftover tots in an airtight container in the refrigerator for up to 10 days. To reheat, arrange the tots on a baking sheet and broil on high for a few minutes until heated through and crispy.
