Ingredients
Gnocchi and Vegetables

- 10 oz cherry tomatoes, halved lengthwise

Instructions
- Preheat oven and prepare tomatoes: Preheat your oven to 425°F (220°C). Slice the cherry tomatoes in half lengthwise to maximize their roasting surface and flavor release.
- Combine ingredients: In a large mixing bowl, combine the halved cherry tomatoes with the fresh or refrigerated gnocchi. Add 1 tablespoon of extra virgin olive oil, ¼ teaspoon each of garlic powder, onion powder, kosher salt, and freshly cracked pepper. Gently toss everything together until the gnocchi and tomatoes are evenly coated with the seasoning and oil.
- Spread on baking sheet: Transfer the seasoned gnocchi and tomato mixture onto a large sheet pan, spreading it out in an even layer to ensure even baking.
