Description

This easy and delicious Cake Mix Pumpkin Bread combines the convenience of yellow cake mix with the rich flavors of pumpkin and warm spices. Perfect for fall baking, this moist and flavorful bread is simple to prepare and ideal for breakfast, snacks, or dessert.

Ingredients

Dry Ingredients

  • 15 oz yellow cake mix
  • 3/4 teaspoon cinnamon
  • 3/4 teaspoon pumpkin pie spice

Wet Ingredients

  • 15 oz canned pumpkin
  • 3 eggs
  • 1/2 cup olive oil or vegetable oil

Instructions

  1. Combine Wet Ingredients: In a mixing bowl, add the canned pumpkin, eggs, cinnamon, pumpkin pie spice, and oil. Beat well until all the ingredients are fully combined and the mixture is smooth.
  2. Add Cake Mix: Gradually add the yellow cake mix to the wet ingredients and beat until the batter is completely combined with no lumps.
  3. Prepare Pan: Grease a loaf pan thoroughly to prevent sticking. Pour the prepared pumpkin bread batter into the loaf pan, spreading it evenly.
  4. Bake: Place the loaf pan in a preheated oven at 375°F (190°C). Bake the pumpkin bread for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean, indicating it is fully cooked.
  5. Cool and Serve: Remove the bread from the oven and allow it to cool in the pan for about 10 minutes before transferring to a cooling rack to cool completely. Slice and serve as desired.

Notes

  • You can substitute olive oil with vegetable oil or melted butter for different flavor profiles.
  • Check the bread with a toothpick starting at 45 minutes to avoid overbaking and drying out the loaf.
  • This pumpkin bread keeps well in an airtight container at room temperature for up to 3 days or can be refrigerated for up to a week.
  • Optional add-ins like chopped nuts or chocolate chips can be folded in before baking for added texture and flavor.
