Ingredients
Chickpeas
- 1 teaspoon avocado oil
- 1 15-ounce can chickpeas, drained & rinsed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon pepper
- 1/4 cup buffalo sauce
Wrap and Veggies
- 2 large wraps
- 1 avocado, sliced
- 1 head romaine, chopped
- 1/4 red onion, sliced
- 4 tablespoons cilantro
- 4 tablespoons vegan ranch dressing
Instructions
- Prepare Chickpeas: Heat the avocado oil in a skillet over medium heat. Add the drained and rinsed chickpeas along with garlic powder, onion powder, smoked paprika, and pepper. Cook for 2-3 minutes until the chickpeas begin to char slightly, enhancing their flavor and texture.
- Add Buffalo Sauce: Pour the buffalo sauce over the chickpeas and continue cooking for another 2-3 minutes, stirring occasionally, to fully coat and warm the chickpeas in the spicy sauce. Then, remove the skillet from heat.
- Assemble Wraps: Lay out each large wrap flat. Evenly distribute the buffalo chickpeas onto the wraps, then layer with sliced avocado, red onion, chopped romaine lettuce, fresh cilantro, and dollops of vegan ranch dressing for a creamy finish.
- Roll and Serve: Carefully roll up each wrap tightly and slice in half diagonally. Serve immediately to enjoy the crisp texture of the chickpeas and fresh veggies combined with the spicy and creamy flavors.
Notes
- Use vegan ranch to keep the recipe vegan-friendly, or substitute with regular ranch if preferred.
- Adjust the amount of buffalo sauce to your preferred level of spiciness.
- You can add other veggies like shredded carrots or cucumber for extra crunch.
- For a gluten-free version, substitute the large wraps with gluten-free tortillas or lettuce wraps.
