Description

Buffalo Chicken Sliders are a delicious and crowd-pleasing appetizer reminiscent of buffalo chicken dip, served in a convenient slider form. These sliders feature shredded rotisserie chicken tossed in spicy buffalo wing sauce, creamy ranch dressing, and Cajun seasoning, all layered with melted Monterey Jack cheese between soft King’s Hawaiian rolls. Topped with a buttery Italian seasoning glaze and baked until golden, they’re perfect for game days, parties, or any casual get-together.

Ingredients

Slider Filling

  • 1 rotisserie chicken, shredded (about 3-4 cups shredded chicken)
  • ½ cup buffalo wing sauce
  • ½ cup ranch dressing
  • 1 teaspoon Cajun seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Rolls & Cheese

  • 2 packages King’s Hawaiian rolls (12 count each)
  • 8 ounces shredded Monterey Jack cheese

Topping

  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon Italian seasoning

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Lightly spray a large baking dish or rimmed baking sheet with cooking spray to prevent sticking and set aside.
  2. Prepare the chicken mixture: In a large bowl, combine the shredded rotisserie chicken with buffalo wing sauce, ranch dressing, Cajun seasoning, salt, and pepper. Stir until evenly mixed and well coated with the flavors.
  3. Slice the rolls: Without separating the rolls, use a large serrated knife to slice the entire package of King’s Hawaiian rolls in half horizontally, like slicing a bagel, creating a top and bottom layer.
  4. Assemble the sliders: Arrange the bottom half of the rolls cut side up in the prepared baking dish. Evenly sprinkle half of the shredded Monterey Jack cheese over the bottoms, then spread the buffalo chicken mixture evenly on top. Sprinkle the remaining cheese over the chicken mixture, then place the top half of the rolls over everything.
  5. Add the buttery topping: In a small bowl, mix together the melted unsalted butter and Italian seasoning. Using a brush, evenly coat the top of the slider buns with this buttery mixture to give them a flavorful, golden finish.
  6. Bake the sliders: Bake in the preheated oven for 10 to 15 minutes, or until the cheese is fully melted and the tops of the sliders are slightly browned and crispy. Remove from the oven.
  7. Serve: Serve the sliders warm. Optionally, you can add coleslaw either on top of the sliders or serve it on the side for a refreshing contrast.

Notes

  • Use rotisserie chicken for quick and flavorful shredded chicken with minimal prep.
  • The Cajun seasoning adds extra depth and a slight kick; adjust according to your spice preference.
  • For a milder version, reduce the buffalo wing sauce or substitute with a milder wing sauce.
  • King’s Hawaiian rolls provide the perfect sweet and soft texture, but other slider buns can be used.
  • To keep sliders warm before serving, cover tightly with foil and place in a warm oven (around 200°F).
  • Try adding blue cheese crumbles for a classic buffalo twist if you like.
