Ingredients
Main Ingredients
- Ramen (or Maggi Noodles) – 2 packs (discard seasoning packets)
- Sesame oil – 1 tbsp (or any neutral oil)
- Mushrooms (sliced) – 2 cups
- Broccoli florets – 1 cup (bite size)
- Onions (sliced) – 1 small
- Garlic (minced) – 3 to 4 cloves
- Water – 3 cups
Sauces and Seasonings
- Hoisin Sauce – 1 tbsp
- Dark Soy Sauce – 1 tbsp
- Rice Vinegar (or White Vinegar) – 2 tsp
- Sriracha (or Red Chilli Sauce) – 1 tbsp (to taste)
- Crushed Black pepper – 1/2 tsp (to taste)
- Salt – 1/2 tsp (to taste)
Garnish
- Spring Onion Greens – 2 to 3 tbsp
- Toasted Sesame Seeds – 1 tsp
Instructions
- Heat Oil and Sauté Aromatics: Heat the sesame oil in a pan over medium heat. Add the sliced onions and minced garlic, sautéing for about one minute until fragrant and soft.
- Cook Mushrooms: Add the sliced mushrooms to the pan. Cook for 3 to 4 minutes on medium heat, stirring occasionally until the mushrooms are golden brown and caramelized.
- Add Sauces and Seasonings: Stir in the hoisin sauce, soy sauce, sriracha, rice vinegar, salt, and crushed black pepper. Cook for an additional 1 to 2 minutes to let the flavors meld together. Adjust salt cautiously as sauces already contain salt.
- Add Noodles, Broccoli, and Water: Add the ramen noodles, broccoli florets, and 3 cups of water to the pan. Cook until the noodles are fully cooked and tender, stirring occasionally to separate the noodles. Alternatively, the noodles and broccoli can be boiled separately then combined with the mushroom mixture.
- Finish and Garnish: Stir in the chopped spring onion greens gently. Remove from heat and garnish with toasted sesame seeds before serving.
Notes
- If you prefer a firmer noodle texture, reduce the cooking water slightly and drain excess liquid after cooking.
- You can substitute the broccoli with other vegetables like bok choy or spinach according to preference.
- Adjust the level of spiciness by modifying the amount of sriracha or red chili sauce.
- For a vegan version, ensure that the ramen noodles and sauces used are vegan-friendly.
- To enhance flavor, you can add a splash of toasted sesame oil at the end.
