Description

Brazilian Cheese Bread, known as Pão de Queijo, is a deliciously cheesy and gluten-free snack made from tapioca flour, eggs, and a blend of sharp cheddar and mozzarella cheeses. These mini cheesy puffs have a light, airy texture with a golden crust and are perfect served warm as an appetizer or snack.

Ingredients

Cheese Bread Ingredients

  • 2 cups tapioca flour
  • 1 cup whole milk
  • 2 large eggs
  • ⅓ cup vegetable oil (avocado oil or light olive oil)
  • ½ cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon salt
  • ½ teaspoon garlic powder

Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 400°F (200°C). Generously spray several mini muffin pans with nonstick cooking spray or brush them with oil to prevent sticking.
  2. Blend Ingredients: In a blender, combine tapioca flour, whole milk, eggs, vegetable oil, shredded sharp cheddar cheese, shredded mozzarella cheese, salt, and garlic powder. Cover and puree until the mixture is smooth and frothy, ensuring the cheese and liquids are well incorporated.
  3. Portion Batter: Using a spoon, carefully fill each muffin well about ¾ full with the batter, ensuring even distribution for uniform rising and baking.
  4. Bake: Bake the filled muffin pans undisturbed for 19 to 20 minutes, until the cheese breads are puffed up and golden brown on the outside.
  5. Re-blend Remaining Batter (If Needed): If you have leftover batter, puree it again in the blender for about 30 seconds to create additional froth, then re-spray the pans and refill for another batch. Serve the cheese breads warm for the best taste and texture.

Notes

  • Use freshly shredded cheese rather than pre-shredded for better melting and texture.
  • Serve warm to enjoy the crispy outer crust and chewy, cheesy interior.
  • These cheese breads freeze well; reheat in the oven to refresh their crispness.
  • Substitute the cheese to suit your preference, but keep a mix of a sharper and a mild cheese for flavor balance.
  • This recipe is naturally gluten-free thanks to tapioca flour.
