Ingredients

Blueberry Filling

  • 5 cups blueberries (divided)
  • ½ cup sugar
  • 2 Tablespoons cornstarch
  • ⅛ teaspoon salt
  • 1 Tablespoon lemon juice
  • ½ teaspoon vanilla paste
  • 1 Tablespoon butter

Crust and Crumble Topping

  • 3 ¼ cups all-purpose flour
  • ¾ cup sugar
  • ¼ cup light brown sugar, tightly packed
  • ½ teaspoon baking powder
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • 1 cup cold unsalted butter, cut into small cubes
  • 1 large egg yolk
  • ½ teaspoon vanilla paste


Instructions

  1. Preheat and prepare baking dish: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch glass baking dish. Set aside.
  2. Cook blueberry filling: In a small saucepan, combine 3 cups of blueberries, sugar, cornstarch, salt, and lemon juice over medium-low heat. Stir frequently until the blueberries release their juices and the mixture becomes very liquidy, about 5-8 minutes.
  3. Boil filling: Increase the heat to medium-high, bring the mixture to a boil while stirring constantly. Boil for 1 minute, then remove from heat.
  4. Add remaining ingredients to filling: Stir in the remaining 2 cups of blueberries, butter, and vanilla paste until the butter melts. Allow the filling to cool while preparing the crust.
  5. Prepare crumb crust mixture: Combine flour, sugars, baking powder, cornstarch, and salt in a food processor. Pulse briefly until combined.
  6. Incorporate butter: Sprinkle cold butter cubes evenly over the dry ingredients and pulse until the mixture resembles coarse crumbs.
  7. Add egg yolk and vanilla: Add the egg yolk and vanilla paste to the mixture and pulse again until the dough just begins to cling together.
  8. Form bottom crust: Press half of the crumb dough evenly into the bottom of the prepared baking dish using your hands or the back of a spoon to form a uniform crust layer.
  9. Add blueberry filling: Pour the cooled blueberry filling evenly over the crust layer.
  10. Top with remaining crumb mixture: Sprinkle the remaining crumb dough evenly over the blueberry filling using your hands, creating a crumb topping.
  11. Bake: Bake in the preheated oven for 55-60 minutes or until the top is golden brown and the filling is set.
  12. Cool and serve: Allow the bars to cool completely for 2-3 hours before slicing to ensure the filling sets properly. Warm bars will be too soft to slice and are best eaten with a spoon.
