Ingredients
Blueberry Filling
- 5 cups blueberries (divided)
- ½ cup sugar
- 2 Tablespoons cornstarch
- ⅛ teaspoon salt
- 1 Tablespoon lemon juice
- ½ teaspoon vanilla paste
- 1 Tablespoon butter
Crust and Crumble Topping
- 3 ¼ cups all-purpose flour
- ¾ cup sugar
- ¼ cup light brown sugar, tightly packed
- ½ teaspoon baking powder
- 1 teaspoon cornstarch
- ½ teaspoon salt
- 1 cup cold unsalted butter, cut into small cubes
- 1 large egg yolk
- ½ teaspoon vanilla paste
Instructions
- Preheat and prepare baking dish: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch glass baking dish. Set aside.
- Cook blueberry filling: In a small saucepan, combine 3 cups of blueberries, sugar, cornstarch, salt, and lemon juice over medium-low heat. Stir frequently until the blueberries release their juices and the mixture becomes very liquidy, about 5-8 minutes.
- Boil filling: Increase the heat to medium-high, bring the mixture to a boil while stirring constantly. Boil for 1 minute, then remove from heat.
- Add remaining ingredients to filling: Stir in the remaining 2 cups of blueberries, butter, and vanilla paste until the butter melts. Allow the filling to cool while preparing the crust.
- Prepare crumb crust mixture: Combine flour, sugars, baking powder, cornstarch, and salt in a food processor. Pulse briefly until combined.
- Incorporate butter: Sprinkle cold butter cubes evenly over the dry ingredients and pulse until the mixture resembles coarse crumbs.
- Add egg yolk and vanilla: Add the egg yolk and vanilla paste to the mixture and pulse again until the dough just begins to cling together.
- Form bottom crust: Press half of the crumb dough evenly into the bottom of the prepared baking dish using your hands or the back of a spoon to form a uniform crust layer.
- Add blueberry filling: Pour the cooled blueberry filling evenly over the crust layer.
- Top with remaining crumb mixture: Sprinkle the remaining crumb dough evenly over the blueberry filling using your hands, creating a crumb topping.
- Bake: Bake in the preheated oven for 55-60 minutes or until the top is golden brown and the filling is set.
- Cool and serve: Allow the bars to cool completely for 2-3 hours before slicing to ensure the filling sets properly. Warm bars will be too soft to slice and are best eaten with a spoon.
Notes
- Ensure the bars are completely cooled before slicing to prevent them from falling apart.
- For a more intense blueberry flavor, use fresh, ripe berries.
- You can substitute vanilla extract for vanilla paste if unavailable.
- Store leftover bars in an airtight container in the refrigerator for up to 4 days.
- Experiment with other fruit fillings such as raspberries or blackberries for variety.
