These healthy blueberry baked oatmeal bars are perfect for a nutritious breakfast or a wholesome snack. Packed with rolled oats, fresh blueberries, and a hint of honey, these bars offer a family-friendly option that’s easy to prepare and delicious to eat. Baked to golden perfection, they provide a chewy texture with a touch of crunch from slivered almonds, making them a satisfying treat any time of day.

Ingredients

Dry Ingredients

  • 2 cups rolled oats
  • 1/2 cup all-purpose flour, spooned and leveled
  • 1/4 cup slivered almonds
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup butter, melted
  • 1/2 cup brown sugar, packed
  • 1/4 cup honey
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Fruit

  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper for easy removal and cleanup.
  2. Mix Dry Ingredients: In a large mixing bowl, combine 2 cups rolled oats, 1/2 cup all-purpose flour, 1/4 cup slivered almonds, 1/2 teaspoon baking powder, and 1/2 teaspoon salt. Stir well and set aside.
  3. Combine Wet Ingredients: In a medium bowl, whisk together 1/2 cup melted butter, 1/2 cup packed brown sugar, 1/4 cup honey, 1/4 cup milk, and 1 teaspoon vanilla extract until smooth and thoroughly mixed.
  4. Combine Mixtures and Add Blueberries: Pour the wet ingredient mixture into the bowl with the dry ingredient mixture. Stir until thoroughly combined. Gently fold in 1 1/2 cups fresh blueberries, taking care not to crush them.
  5. Transfer and Bake: Pour the oatmeal mixture into the prepared baking pan. Use a spoon or spatula to spread it evenly across the pan. Transfer the pan to the oven and bake for 30 to 35 minutes until the center is set and the edges turn golden brown.
  6. Cool and Slice: Remove the pan from the oven and let the baked oatmeal bars cool completely in the pan. Once cooled, lift out the bars using the parchment paper and slice into 9 evenly sized bars.
  7. Storage: These bars can be enjoyed immediately or stored in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze the bars for up to 3 months.

Notes

  • Use fresh or frozen blueberries; if using frozen, do not thaw before adding to maintain texture.
  • For a dairy-free version, substitute butter with coconut oil and use your preferred plant-based milk.
  • Make sure the bars cool completely before slicing to prevent them from falling apart.
  • These bars can be enjoyed cold or warmed up for a cozy breakfast treat.
  • Customize by adding nuts, seeds, or dried fruits according to your taste preferences.
