Ingredients
Crust and Topping
- 3 cups all purpose flour
- 1 1/2 cups sugar
- 1/4 tsp salt
- 1 1/2 cups butter (chilled, cut into 1/2 inch cubes)
Filling
- 4 large eggs
- 2 cups sugar
- 1 cup sour cream
- 3/4 cup all purpose flour
- Pinch salt
- 4 cups blackberries (defrosted and drained or fresh)
Instructions
- Prepare the crust and topping: Preheat your oven to 350°F (175°C) and grease a 9 x 13 inch baking pan thoroughly to prevent sticking.
- Make the crumb mixture: In a food processor fitted with a metal blade, combine the 3 cups flour, 1 1/2 cups sugar, and 1/4 tsp salt. Pulse until fully mixed.
- Add the butter: Add the chilled, cubed butter to the flour mixture. Process until the butter is evenly incorporated but the mixture remains crumbly, resembling coarse crumbs.
- Separate topping crumbs: Reserve 1 1/2 cups of the crumb mixture for the topping. Press the remaining crumbs firmly and evenly into the bottom of the prepared pan to form the crust.
- Bake the crust: Bake the crust for 12 to 15 minutes until it turns golden brown. Remove from oven and allow it to cool for at least 10 minutes.
- Prepare the filling: In a large bowl, whisk together the 4 eggs and 2 cups sugar until smooth. Gently fold in 1 cup sour cream, 3/4 cup flour, and a pinch of salt. Carefully fold in the defrosted and drained or fresh blackberries, taking care not to crush them.
- Assemble the bars: Spoon the blackberry filling evenly over the cooled crust. Then sprinkle the reserved crumb topping evenly over the filling.
- Bake: Return the pan to the oven and bake for 45 to 55 minutes, until the top is lightly browned and the filling has set.
- Cool and serve: Allow the bars to cool completely, at least 1 hour, before cutting into 24 bars for serving.
Notes
- Use frozen blackberries that have been fully defrosted and drained to avoid excess moisture making the bars soggy.
- For a sharper flavor contrast, consider adding a teaspoon of lemon zest or juice to the filling.
- Ensure the butter is very cold so that your crumb topping achieves the perfect texture.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
