Description

These Blackberry Pie Bars combine a buttery crumbly crust with a creamy, tangy blackberry filling for a delightful dessert that’s perfect for any occasion. With a golden baked crust, luscious blackberry custard filling, and a crumb topping, these bars are easy to make and irresistible to eat.

Ingredients

Crust and Topping

  • 3 cups all purpose flour
  • 1 1/2 cups sugar
  • 1/4 tsp salt
  • 1 1/2 cups butter (chilled, cut into 1/2 inch cubes)

Filling

  • 4 large eggs
  • 2 cups sugar
  • 1 cup sour cream
  • 3/4 cup all purpose flour
  • Pinch salt
  • 4 cups blackberries (defrosted and drained or fresh)

Instructions

  1. Prepare the crust and topping: Preheat your oven to 350°F (175°C) and grease a 9 x 13 inch baking pan thoroughly to prevent sticking.
  2. Make the crumb mixture: In a food processor fitted with a metal blade, combine the 3 cups flour, 1 1/2 cups sugar, and 1/4 tsp salt. Pulse until fully mixed.
  3. Add the butter: Add the chilled, cubed butter to the flour mixture. Process until the butter is evenly incorporated but the mixture remains crumbly, resembling coarse crumbs.
  4. Separate topping crumbs: Reserve 1 1/2 cups of the crumb mixture for the topping. Press the remaining crumbs firmly and evenly into the bottom of the prepared pan to form the crust.
  5. Bake the crust: Bake the crust for 12 to 15 minutes until it turns golden brown. Remove from oven and allow it to cool for at least 10 minutes.
  6. Prepare the filling: In a large bowl, whisk together the 4 eggs and 2 cups sugar until smooth. Gently fold in 1 cup sour cream, 3/4 cup flour, and a pinch of salt. Carefully fold in the defrosted and drained or fresh blackberries, taking care not to crush them.
  7. Assemble the bars: Spoon the blackberry filling evenly over the cooled crust. Then sprinkle the reserved crumb topping evenly over the filling.
  8. Bake: Return the pan to the oven and bake for 45 to 55 minutes, until the top is lightly browned and the filling has set.
  9. Cool and serve: Allow the bars to cool completely, at least 1 hour, before cutting into 24 bars for serving.

Notes

  • Use frozen blackberries that have been fully defrosted and drained to avoid excess moisture making the bars soggy.
  • For a sharper flavor contrast, consider adding a teaspoon of lemon zest or juice to the filling.
  • Ensure the butter is very cold so that your crumb topping achieves the perfect texture.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
