Ingredients
150g dark chocolate (chopped) (for chocolate custard)
500ml ready-made custard (for chocolate custard)
600ml double cream (for whipped cream)
2 tbsp icing sugar (for whipped cream)
1 x jumbo chocolate Swiss roll (for Swiss roll)
4–5 tbsp Kirsch (optional) (for Swiss roll)
400–600g cherries in kirsch, cherries in syrup, or cherry pie filling (for everything else)
200g fresh cherries (for everything else)
200g cherry jam/conserve (for everything else)
1 x tub brownie bites (for everything else)
25g grated chocolate (for everything else)
Instructions
- Pour the ready-made custard into a pan and add the chopped dark chocolate. Heat the mixture over low heat, stirring until the chocolate is fully melted and the custard is smooth. Once smooth, pour the custard into a bowl and leave it to cool completely.
- Add the double cream and icing sugar to a bowl. Whisk the mixture to soft peaks, ensuring it holds its shape but isn’t too stiff.
- Slice the chocolate Swiss roll into 1-2cm slices. If using, sprinkle the Swiss roll slices with 4-5 tbsp of Kirsch for added flavor.
- Start by arranging the Swiss roll slices at the bottom of a trifle dish, positioning some along the edges and others at the bottom to create a solid base. Pour half of the chocolate custard over the Swiss roll slices and spread it evenly. Add half of the cherries (from the tin, jar, or fresh cherries) and half of the brownie bites. Spread half of the whipped cream over the top of the cherries and brownie bites, followed by a layer of cherry jam. Repeat the layers, finishing with the remaining whipped cream on top. Decorate the top with fresh cherries and a sprinkle of grated chocolate.
- Allow the trifle to set in the fridge for at least an hour so the custard firms up and the flavors meld together. Serve chilled and enjoy this indulgent dessert!
Notes
- For a non-alcoholic version, omit the Kirsch and use fruit juice, like cherry juice, to moisten the Swiss roll slices.
- For a vegan version, use dairy-free custard, non-dairy whipped cream, and a vegan chocolate Swiss roll for a dairy-free option.
- For a nutty addition, add chopped nuts, such as toasted almonds or hazelnuts, to the layers for added crunch and flavor.
