- 1 lb ground beef (450 – 500 g)
- 4 large eggs
- 2 tablespoons avocado or vegetable oil, divided
- 3 cups cooked day-old sushi rice
Sauce
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon unseasoned rice vinegar
- 2 teaspoons coconut sugar
- 1 inch fresh ginger, minced or 2-3 teaspoons ground ginger
- 3 garlic cloves, minced
Instructions
- Prep Ingredients: Cut broccoli into very small florets and place in a medium bowl. Whisk the eggs in a small bowl. In another small bowl, whisk together all sauce ingredients: soy sauce, sesame oil, rice vinegar, coconut sugar, ginger, and garlic. Set aside.
- Cook Broccoli: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add broccoli and cook undisturbed for about 3 minutes to get a good char. Then toss occasionally until crisp-tender, about 2 minutes more. Transfer broccoli back to the bowl.
- Cook Beef: Reduce heat to medium-low. Add ground beef to the skillet, breaking it up with a spatula, and cook until no longer pink, about 5 minutes. Transfer cooked beef to the bowl with broccoli.
- Cook Eggs: Add remaining tablespoon of oil to the skillet. Pour in eggs and cook, stirring constantly, until curds form, about 30 seconds, careful not to overcook to avoid rubbery texture.
- Add Rice and Sauce: Add the cooked rice and prepared sauce to the skillet with eggs. Toss to combine and press down into the skillet evenly.
- Crisp the Rice: Cook undisturbed for 3-5 minutes until the underside of the rice is crispy. Turn off heat.
- Combine and Serve: Return the broccoli and beef to the skillet; toss everything together to combine well. Serve hot and enjoy your beef and broccoli fried rice!
