Ingredients
Dry Ingredients
- 2 cups rolled oats
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
Wet Ingredients
- 2 eggs
- 1/3 cup maple syrup
- 1/4 cup coconut oil
- 1 1/2 cups almond milk
- 1 tsp vanilla bean paste
Add-Ins
- 1 cup chocolate chips (plus extra for sprinkling on top)
Toppings (Optional)
- Peanut butter
- Whipped cream
- Maple syrup
- Nuts
Instructions
- Preheat the oven. Set your oven to 350°F (175°C) and grease an 8×8 inch baking pan to prevent sticking during baking.
- Mix dry ingredients. In a large bowl, combine the rolled oats, cocoa powder, baking powder, and salt, ensuring all are evenly distributed.
- Whisk wet ingredients. In a separate medium bowl, whisk together the eggs, almond milk, maple syrup, coconut oil, and vanilla bean paste until smooth and fully combined.
- Combine wet and dry mixes. Pour the wet ingredient mixture into the dry ingredients and stir thoroughly until the batter is uniform.
- Add chocolate chips. Fold in 1 cup of chocolate chips, then pour the oatmeal mixture into the greased baking dish. Sprinkle additional chocolate chips evenly over the top for extra chocolate bursts.
- Bake the oatmeal. Place in the preheated oven and bake for 45-50 minutes or until the oatmeal is set and a toothpick inserted comes out mostly clean. Remove and let cool for 10 minutes before serving.
- Add toppings and serve. Top the warm baked oatmeal with your choice of peanut butter, whipped cream, maple syrup, or nuts, then enjoy a rich and comforting breakfast treat.
Notes
- You can substitute almond milk with any other plant-based or dairy milk.
- For a vegan version, replace eggs with flax eggs or another egg substitute.
- Letting the baked oatmeal cool slightly helps it set better for easier slicing.
- Add a pinch of cinnamon or a dash of espresso powder for enhanced chocolate flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
