Description

This Baked Chocolate Brownie Oatmeal is a comforting and nutritious twist on traditional oatmeal, combining the rich flavors of cocoa and chocolate chips with wholesome rolled oats. Baked to perfection, it offers a warm, chocolatey, and hearty breakfast or snack option that can be customized with your favorite toppings like peanut butter, whipped cream, or nuts.

Ingredients

Dry Ingredients

  • 2 cups rolled oats
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 2 eggs
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1 1/2 cups almond milk
  • 1 tsp vanilla bean paste

Add-Ins

  • 1 cup chocolate chips (plus extra for sprinkling on top)

Toppings (Optional)

  • Peanut butter
  • Whipped cream
  • Maple syrup
  • Nuts

Instructions

  1. Preheat the oven. Set your oven to 350°F (175°C) and grease an 8×8 inch baking pan to prevent sticking during baking.
  2. Mix dry ingredients. In a large bowl, combine the rolled oats, cocoa powder, baking powder, and salt, ensuring all are evenly distributed.
  3. Whisk wet ingredients. In a separate medium bowl, whisk together the eggs, almond milk, maple syrup, coconut oil, and vanilla bean paste until smooth and fully combined.
  4. Combine wet and dry mixes. Pour the wet ingredient mixture into the dry ingredients and stir thoroughly until the batter is uniform.
  5. Add chocolate chips. Fold in 1 cup of chocolate chips, then pour the oatmeal mixture into the greased baking dish. Sprinkle additional chocolate chips evenly over the top for extra chocolate bursts.
  6. Bake the oatmeal. Place in the preheated oven and bake for 45-50 minutes or until the oatmeal is set and a toothpick inserted comes out mostly clean. Remove and let cool for 10 minutes before serving.
  7. Add toppings and serve. Top the warm baked oatmeal with your choice of peanut butter, whipped cream, maple syrup, or nuts, then enjoy a rich and comforting breakfast treat.

Notes

  • You can substitute almond milk with any other plant-based or dairy milk.
  • For a vegan version, replace eggs with flax eggs or another egg substitute.
  • Letting the baked oatmeal cool slightly helps it set better for easier slicing.
  • Add a pinch of cinnamon or a dash of espresso powder for enhanced chocolate flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
