Description

These Baked Apple Fritters are a delightful twist on traditional fried fritters, offering a lighter, oven-baked version with a crispy glaze. Made with a blend of all-purpose and white whole wheat flours, warm spices, and fresh chopped apples, they are perfect for breakfast or a sweet snack. The fritters are topped with a vanilla glaze that is baked to perfection under the broiler, creating a beautiful glossy finish.

Ingredients

Dry Ingredients

  • 3/4 Cup all-purpose flour
  • 3/4 Cup white whole wheat flour
  • 1/2 Cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt

Wet Ingredients

  • 6 Tablespoons butter, cold and cut into pieces
  • 1/2 Cup milk (higher fat content recommended)
  • 1 egg
  • 1 teaspoon vanilla flavoring
  • 1 Cup chopped apple

Glaze

  • 1 Cup confectioner’s sugar
  • 2 Tablespoons milk (higher fat content recommended)
  • 1 teaspoon vanilla flavoring

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with a silicone baking mat suitable for broiling, or simply use a plain baking sheet if not available.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, white whole wheat flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt until evenly combined.
  3. Cut in Butter: Add the cold, cut butter pieces to the dry ingredients and cut them in using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Combine Wet Ingredients: In a separate small bowl, whisk together the milk, egg, and vanilla flavoring until smooth.
  5. Mix Batter: Pour the wet mixture into the dry ingredients and stir gently until just combined. Carefully fold in the chopped apple to distribute evenly through the batter.
  6. Form Fritters: Drop the batter by 1/4 cupfuls onto the prepared baking sheet. For smaller fritters, use a heaping tablespoon.
  7. Bake Fritters: Bake for 11 to 13 minutes or until the bottoms are golden brown and the centers are set. Smaller fritters may take only 8 minutes; start checking early to prevent over baking.
  8. Prepare Glaze: While fritters are baking, whisk together confectioner’s sugar, milk, and vanilla flavoring until smooth to make the glaze.
  9. Broil with Glaze: Remove the fritters from the oven and place on a wire rack. Turn the oven to broil. Brush a thin layer of glaze over the tops of the fritters and place under the broiler for 2 to 4 minutes, or until the glaze bubbles and the tops start to turn golden.
  10. Final Glazing: Carefully remove the baking sheet from the broiler, transfer fritters back to the wire rack, and brush the remaining glaze over the warm fritters.
  11. Serve: Allow the glaze to harden slightly before serving. These fritters are best enjoyed the same day for optimal texture and flavor.

Notes

  • Use higher fat milk like whole milk or 2% for richer flavor in both batter and glaze.
  • If you do not have a silicone baking mat suitable for broiling, omit it and expect a slightly messier pan.
  • Smaller fritters bake faster; always monitor closely to avoid burning.
  • Fresh, crisp apples work best for texture; peel if desired.
  • The glaze hardens as it cools, giving a pleasantly crisp topping on the fritters.
  • These fritters can be stored in an airtight container for a day but are best when fresh.
