Instructions

  1. Toast the bread: Toast the bread slices in a toaster until they are golden and crispy. Once toasted, spread the quartered avocado evenly over the toast. Slice and mash the avocado gently on top, then season with salt and pepper to taste.
  2. Fried eggs: Heat olive oil or butter in a nonstick skillet over medium-high heat until hot. Break the egg onto the skillet and immediately reduce the heat to low. Cook uncovered until the egg whites are completely set and the yolks have thickened to your liking, about 5-7 minutes.
  3. Scrambled eggs: Heat olive oil or butter in a nonstick skillet over medium-high heat until hot. Whisk the eggs in a small bowl, then carefully pour into the center of the pan. When the edges begin to set, gently fold the eggs to cook through, about 2-3 minutes.
  4. Boiled eggs: Place the eggs in a saucepan and cover with cool water until fully submerged. Bring the water to a rolling boil, then reduce heat to low and cook depending on desired doneness: 4 minutes for soft boiled, 6 minutes for medium boiled, or 12 minutes for hard boiled. Transfer eggs to an ice water bath to cool before peeling.
  5. Poached eggs: Bring a large pot of water to a boil. Add the vinegar and stir to create a vortex. Lower the heat so water is simmering with a rolling boil at the bottom. Crack the egg into a small bowl, then carefully slide it into the center of the pot. Cook for 3-4 minutes depending on desired doneness, then remove with a slotted spoon.
  6. Assemble and season: Top the mashed avocado toast with the prepared egg of your choice. Add additional salt and pepper if desired, and serve immediately for a fresh, delicious start to your day.
